Happy New Year!

Counting stepsIt’s been a tough transition to the cool climes of Canada after the warm temperatures in the Caribbean! We’ve been treated to a couple spectacular days of fog here though, so that’s been interesting.

Bailey didn’t seem to mind our being away too much. She has easily settled right back into her normal routine of sticking her nose into my face at 7:30 am, just to let me know that she’s available to go for a walk if I want to get up.

With the loss of my father this year, it’s difficult to be upbeat as the year closes. But the weeks in the south were very nice, with wonderful experiences in and out of the ocean. But I have to admit it’s been a very difficult time.

I wish you all the best in 2016. I’ve been running a lot that last few months, so in the spirit of that sport I offer you this toast: May you be half way to the hot tub, before the barking dogs know you’ve run by their yards!

Remembrance Day 2015

Vern in uniformNovember 11 is meant as a day to pay tribute to our soldiers who fought, and died to keep our country safe and free. I hope you will take two minutes to remember those who gave their lives, so that ours would be better.

I offer this video, as a reminder of how simple it is. On November 11, 1999 Terry Kelly was in a Shoppers Drug Mart store in Dartmouth, Nova Scotia. At 10:55 AM an announcement came over the store’s PA asking customers who would still be on the premises at 11:00 AM to give two minutes of silence in respect to the veterans who have sacrificed so much for us.

Terry was impressed with the store’s leadership role in adopting the Legion’s “two minutes of silence” initiative. He felt that the store’s contribution of educating the public to the importance of remembering was commendable.

When eleven o’clock arrived on that day, an announcement was again made asking for the “two minutes of silence” to commence. All customers, with the exception of a man who was accompanied by his young child, showed their respect.

Terry’s anger towards the father for trying to engage the store’s clerk in conversation and for setting a bad example for his child was later channeled into a beautiful piece of work called, “A Pittance of Time”. Terry later recorded “A Pittance of Time” and included it on his full-length music CD, “The Power of the Dream”.

 

Running around

Bailey in the parkBailey has made a lot of new friends in the neighbourhood. There are tons of dogs, and most are pretty friendly.

Lots of people are using this park as an off leash area, although I’m not sure it is an off leash area. But, no one seems to complain, and all the dogs are well behaved.

Here is a video of Bailey chasing one of her new friends. I forgot I had my phone with me, but they had been chasing each other for quite some time.

Pretty funny stuff… she’s been having fun that’s for sure!

Our new neighbourhood

The PhoenixWednesday the final pod arrives and once it is unpacked, we will be officially moved in! The first picture is of our new building, named the Phoenix, as viewed from the park by the Fraser river where we often take Bailey for her daily stroll.

FREE Pooch ParkingThe River District is part of a planned community with many amenities a couple of years away. However, there is a distinct feel to the neighbourhood. We’ve been welcomed to this area by so many people, it’s hard to believe. Even Bailey feels welcome – check out the free parking and free water for the dogs!

A view of the riverIt’s a working river, for sure, with lots of tugs towing various vessels and big log booms up and down the channel. Here a big heron gets a look at the area from atop a big piling.

Bailey watches the riverBailey never gets tired of checking out the river. If I let her get close enough, she jumps right in. There are other parks, but we haven’t ventured far yet.

 

Happy Birthday, Pam!

Pam turned 50 again today, and it was a pretty nice day. We are still living in the hotel. The flooring guys didn’t quite get it done before the long weekend, unfortunately.

The old carpet and appliances have been removed, the whole apartment was skim coated with cement to completely level it, then came the flooring install. No transitions at all, except into the two tiled bathrooms! You can play hockey on it….

We have been cleaning for the long weekend. The floors will be done on Tuesday. Our new bedroom and dining room furniture arrive on Wednesday. So Wednesday the 9th will be the first night in the new place.

We are both pretty much running on empty. It’s hard to remember what day it is, let alone what needs to be done! Good thing we don’t have a phone, since the telemarketers could talk me into anything right now.

I have no pictures to offer – I have a camera, but I can’t remember how to use it — just kidding…. I just haven’t taken pictures – there is so much to do, there is no time to take pictures of it.

Green Papaya salad – Som Tum Salad

I make this green papaya salad, a Thai specialty, and I’ve gotten a few requests on how to make it, so I’ve decided to put in a blog post.

The salad ingredients:

  • Green Papaya (sometimes called cooking papaya – not a red or orange one)
  • A handful of green beans
  • tomatoes (the little “grape tomatoes” if you want, but I just use whatever tomato I have around.)
  • hot peppers – to your taste – I usually use two jalapenos
  • a handful of peanuts

Som tum sauce fixingsThe sauce:

  • two or three garlic gloves
  • the juice of a lime
  • Thai basil
  • fish sauce
  • salt
  • sugar (I use fake sugar – two packets)

To make it:

First, the green papaya. They come in varying sizes, so hard to put a figure on it, but say you get one about the size of two fists… Use half to serve 3 or 4 good sized portions. Cut the papaya in half. Take out the seeds, and discard them. Peel the papaya. Then grate it into a bowl.

Trim the beans, and chop into bite size pieces.

Chop up the jalapenos quite small, discarding the seeds.

Take about a cup of water, stick it into a two cup measuring cup, and slap it into the microwave for 3 minutes on high, or until the water boils. Drop the beans and the jalapeno pieces into the water and leave it for 20-30 seconds. Immediately rinse under cold water. Drain the water and throw the beans and jalapenos in with the grated green papaya.

Lime juicerNow make the sauce. Smash the garlic gloves, and chop them finely. Pour a half teaspoon of salt over the chopped garlic and let it sit while you juice the lime. I have a great gadget for juicing a lime, and so I just chop the lime into about 6-8 pieces and use the “squisher” and put the juice into a measuring cup. Add the two packets of fake sugar and about a tablespoon of the fish sauce. Now press your knife into the salt/garlic mixture and squish it. Then throw it into the lime/sugar/fish sauce mixture. Chop up about 8 or 10 leaves of the Thai basil and throw it in. Give it a good whisk with a fork.

Pour it over the papaya/green bean/jalapeno mixture and give it a good mixing.

Now chop up the tomatoes and add it to the salad. Let it sit for a bit.

When you go to serve it, just put it on your plates, and throw a few peanuts over the top of each salad.
